Beer description
The Morning After is a ‘wild ale’ that has been entirely fermented with with wild microbes floating around the crisp Gisborne Air. In order to capture the microbes a portion of the wort (fermented beer) was allowed to cool uncovered over night in a fruit orchard next to the brewery. The ‘inoculated wort’ was then added back to the rest of the batch to complete fermentation.
