7 Vidas - White Solera Gen I

WHITE SOLERA – GENERATION I, Barrel Aged American Wild Ale. WHITE SOLERA – GEN I, the first bottling from our white wine solera, a group of six French oak barrels that previously held Sauvignon Blanc white wine from a well-known Chilean winery. These barrels were inoculated with our ‘house’ mixed culture, to which we added Brettanomyces ‘C’. As this is the first generation of this beer, the ageing time has been quite long (14 months) to allow the microflora to adapt to the barrels and begin to generate the expected aromas and flavours. Additionally, it has undergone four months of bottle conditioning to achieve greater complexity and adequate carbonation. TASTING NOTES: Straw gold colour, slightly cloudy. The nose presents delicate aromas of peach, pear and white wine, accompanied by a soft fruity Brett. Medium acidity, medium-high carbonation with a clean fruitiness on the palate reminiscent of a white sparkling wine. An exceptional beer that will continue to evolve in the bottle for much longer. WHITE SOLERA is a golden-coloured beer (the term WHITE comes from the use of white wine barrels) and is classified within the large group of AMERICAN WILD ALES.
