Beer description
Using a recipe very similar to our Gateway Kolsch as the base, it gives us a blank canvas on which to create a new beer. In this instance, we pitched Brett D during primary fermentation to see how the flavour was affected. The results are fantastic. You still get the drinkability of our Kolsch, with its mild, cracker malt body and light bitterness, but added to that is a distinct Brett farmhouse aroma. Slightly citrusy, like overripe pineapple it’s pleasant and approachable. The flavour contains much of the same characteristics, mild malt with a distinctly fruity middle and very dry finish. It’s not overwhelming, but gives you a good idea how a secondary Brett fermentation can affect an otherwise clean beer.
