Bad Beat Dogs Playing Poker

For our first ever collaboration, we reached out to our good friends across the Valley, Big Dogs Brewing Company. We put our heads together, and now present you with this Tropical Stout. Historically, when English Stout brewers would export their “extra” stouts to tropical climate markets, they would alter the beer to better suit these climates. Thus their bitter, roasty, and coffee forward stouts would be made rather sweet and much less aggressive on the roasted malt character. For our first ever collaboration, we reached out to our good friends across the Valley, Big Dogs Brewing Company. We put our heads together, and now present you with this Tropical Stout. Historically, when English Stout brewers would export their “extra” stouts to tropical climate markets, they would alter the beer to better suit these climates. Thus their bitter, roasty, and coffee forward stouts would be made rather sweet and much less aggressive on the roasted malt character. Using this as a guideline we mashed a bunch of debittered black malt, mixed with some English chocolate malt, and some rich caramunich malt. Then we fermented it out with some Hornindal Kveik yeast for subtle nuances of tropical fruit esters and a dry finish. What came out is an incredibly unique and delicious concoction. Layers of rich dark & milk chocolate, with subtle fig, toffee, and molasses. The body is silky smooth and creamy, before hanging a sharp left down drinkability lane with a crisp, dry finish.
