Beer description
Laia is a mixed-fermentation farmhouse ale with spicy, fruity, and rustic notes, a pleasantly sour taste, and natural carbonation.
Inoculated with Saison and Brettanomyces Bruxellensis yeasts at the same time, the beer underwent a first fermentation in a tank, followed by a second one in the bottle that created a unique and complex combination of aromas and flavors over several months.
Made with English pale malt, wheat, and Munich malt for a medium body and golden color. The addition of Perle hops on one hand and Simcoe on the other adds a balanced bitterness and slightly fruity aromas that give the beer a greater depth.
Laia was brewed in collaboration with Zapiain cider house and is ready to be enjoyed now, although the Brett yeast still present in the bottle will further evolve the beer over the next few months.
