For this Kweepeer, we macerated quinces for over six months on both two- and three-year-old lambik. We then blended with some very young lambik for continued bottle fermentation. Lambikken originate from five different barrels and seven different brews, brewed by both Lindemans (30%) and 3 Fonteinen. Of the cereals used in the 3 Fonteinen brews, a quarter was sourced from our own Pajottenland cereal collective. The weighted average age of the blend upon bottling was more than 40 months
