Cerbero is our project dedicated to the Old Ale style. Our idea was to bring to the barrel room a reinterpretation of a classic English style – characterised by dark tones, malty depth and high alcohol content – ​​while maintaining some of its distinctive and fascinating historical characteristics such as ageing in wood and a bacterial and brettanomyces contamination .
