The oldest beer from the traditional Chimay monastery brewery is the Chimay Brune: After completion, the Dubbel is bottled and subjected to a second fermentation. Typically for Belgian beer, a small amount of sugar is also added to the brune to stimulate the second fermentation in the bottle. Brune flows into the glass in a shining copper tone and forms an impressive head of foam. The almost naturally cloudy beer has a fine fragrance that rises from the fine-pored foam. Subtle roasted aromas meet dried red fruits and buttery caramel on the nose.
