Mogwaï Beer Company - Chit Happens

For this new NEIPA, we have used Chit malt, a malt that has undergone a short germination process, giving it a high protein content. By extension, this gives the beer body, cloudiness and good head retention. As a result, we felt it could do the job very well in a NEIPA, particularly as a replacement for oat flakes. Of course, we went all out on the hops, using Wakatu, Riwaka and Idaho 7 Cryo hot, as well as Vista (DH1) and Cascade Cryo (DH2 + DH3) cold. The whole develops lovely notes of peach, tangerine and grapefruit.
