Speciation Artisan Ales - Cranberry Incipient

Foeder Aged Solera Sour Wheat Ale with Cranberry - Our golden sour wheat ale, Incipient, is aged in a large oak barrel known as a foeder. We refer to it as a solera blend because it is a continuously blended ale - every month we remove 1/5 of its contents and replace it with freshly brewed beer. This means that a portion of every batch of Incipient ever brewed is present in this barrel, dating back over 3 years! This results in an incredibly complex and layered base beer, to which we add a different single fruit or spice each month.
