Beer description
Crop Colors: Pink Dawn started in the fall of 2020 with a blend from our barrel stock (made entirely of southeast grain) that ranges in 12-26mo of age. The blend was then introduced to grape pomace from Yonah Mountain Vineyards, in their wine barrels, for a 6-month cold maceration. After 6 months, we moved the beer onto fresh, carbonic macerated strawberries from Hickory Hill and Diamond Hill Farms. We moved the beer off the fruit after 8 weeks of maceration and then bottle/keg conditioned with a lavender simple syrup we made using lavender sourced from 3 Porch Farm and dried in house. This beer has been conditioning in our cellar since December of 2021 and is now ready to enjoy
