That's what we thought when we came across a 500-liter PX Sherry cask . A bold choice, but after 15 months of maturation , the result is an Imperial Stout with warmth, depth, and layered complexity . What you see and smell This stout is intensely black and cloudy , with a firm, dark brown head that holds steady. The aroma immediately reveals the influence of maturation: an explosion of licorice coffee, bay leaf, and resin , with subtle notes of dried fruit and spicy woody influences from the sherry cask. What you taste This beer balances between sweet and bitter , without veering into either extreme. The roasted malt provides notes of coffee, salmiak, and licorice , while the cask adds subtle hints of raisin and plum . The finish is warm and layered, with a refined spiciness and a firm malt base that provides structure.
