Beer description

If there ever was a beer that embodied the philosophy of “brew it to 11” that we’re known for, it just might be Brightwater. Yes, it’s a Pilsner – but at the same time it’s so much more. We’ve spared no expense or resource in meticulously crafting this brew in order to pay tribute to the life and accomplishments of Ernest Rutherford. Rutherford has strong ties with Canada, having carried out the majority of his life’s work at McGill University. Thus, Brightwater is composed of craft-malted Canadian prairie Pilsner malt from the fine folks at Maker’s Malt in Saskatchewan. All of his Canadian-based research led to a Nobel Prize in Chemistry in 1908, around the time that the Tum 35 yeast strain would have been used in production breweries. This unique strain of lager yeast nearly went extinct in the post-war era, being lost to the world for nearly 70 years. We manged to get our hands on some newly-revived Tum 35 and thought it would be fitting to use a strain that Rutherford himself might have enjoyed in his day. Finally, we pay tribute to his birthplace – the tiny farming town of Brightwater, New Zealand by dry hopping with three of the finest New World hops from his homeland. Brightwater boasts an incredible depth of hop character for a Pilsner thanks to the inclusion of Nelson Sauvin, Motueka, and Wakatu hops.
