Some beers mark a before and after. For the founders of Espiga, Soundwave IPA by Siren was exactly that: one of the first British IPAs we ever tried, and one that opened our eyes to new ways of understanding hops. Years later, collaborating with Siren isn’t just an honour — it’s the closing of a circle and the beginning of a new journey.
That’s how ONDINE was born: a New England IPA that celebrates this cross-border connection and the evocative power of beer. Its name is inspired by the aquatic nymphs of mythology — free spirits rising from mist and foam — a perfect metaphor for this collaboration between two breweries that believe in the liquid magic of hops.
With its 6.3% ABV, ONDINE pours hazy and pale golden, crowned by a creamy head that hints at the aromatic burst to come. On the nose, Idaho 7 and Nectaron hops intertwine like hidden currents: bold notes of ripe pineapple, mango, peach and resinous citrus flow into a tropical base with hints of stone fruit.
On the palate, it’s juicy like tropical juice, silky-smooth, medium-bodied, and gently bitter without losing freshness. Balanced carbonation extends the fruity, enveloping finish.
ONDINE is more than a beer — it’s a love letter to hops, to origins, and to the kind of encounters that, like the best stories, stay with you forever.
