Beer description
Made from pilsner malt, rice (50:50), Perle and Sorachi Ace hops. Fermented with a Lager yeast blend. The addition of large amounts of rice in the grist, provides precursors for γ-C9 (Gamma-nonalactone) formation (despite other aliphatic lactones) driven by yeast metabolism. For example Gamma-nonalactone has a coconut aroma, whereas Gamma-decalactone provides peach aromas in beer. A tiny dryhopping addition of Sorachi Ace at the beginning of a long (> 2 months) lagering phase should complement these aromas in the final beer.
