Elliott Bay - Gin Barrel-Aged Demolition

After the success of our collaboration with Copperworks on our first Gin Demo, we decided to go bigger. Our barrel broker helped us source a bunch of New England gin barrels. Aged Demo in these barrels for 5 months and blended in Demo from two Copperworks barrels that had been aged for 6 and 15 months. The New England gin barrels added a more herbal note that pairs well with the citrus note of the Copperworks barrels.
