Beer description
This saison was brewed in collaboration with our homie Mike from Chicago,of Is/Was Brewing. Brewed with 100% Sugar Creek malt, raw Wildflower Honey from Windmill Hills Farm, and Saaz hops from 45th Parallel as well as Sultana from Hopsteiner. We aged it in our foeder for 3 months, the first beer to grace the our wood! The aroma is bright, with spicy earth and floral notes and sweet citrus. Mike says he loves the light vanilla/coconuttiness from the oak that works perfectly with the pineapple and citrus of the sultana with the perceived sweetness from the honey to make this grown-up-pina-colada thing come alive. The finish is so perfectly dry with just the right amount of oaky, tannic structure, like new world white wine vibes.
