When Labietis joined us for an exciting collaboration a few weeks ago, we were pulled out of our brewery bubble and had to venture out into the great outdoors, in the cold, roaring rain...
Just kidding, the weather was nice.
BOYAR'S BREW may seem like a delight for landlords, innkeepers, and kings, but in reality, it has humble roots yet is a true sensory pleasure.
It is an ale in the braggot style, using huge amounts of local acacia honey, carefully infused with locally gathered wild chervil and bird cherry blossoms (picked by me personally).
It is dry, crisp, and effervescent on the palate, with elegant floral notes that still remind of the sweetness of condensed honey, a hint of pollen, and hints of light, slightly unripe berries, with a lovely anise-like note.
That was fun. Shall we make more of it?
