Beer description
On an unexpectedly warm night in January 2018, we decided to brew a spontaneously fermented beer that would be cooled and inoculated in our coolship right outside our brewery. We then transferred the wort to steamed oak barrels to ferment and age. 450ish days later, and we have our first ever beer brewed with 100% wild cultures sourced from our location via the coolship, and 100% Michigan grown ingredients!
If you enjoy traditional lambic, you're in luck. Spontaneous Generation tastes very similar to lambic, with strong notes of overripe fruit, hay, light charred oak tannins, and a hint of vanillin. Cheers!
