Beer description

Mixed Fermentation Sour Ale with Pink Guava, Yuzu, Experimental Castillo Frozen Cherry Processed Coffee, Tahitian Vanilla, Cassia Bark, and Ecuadorian Cocoa Nibs. Brewed in collaboration with our friends at Junto Coffee. When drinking this beverage we would like to take note of this extremely unique coffee process. Grown by Felipe Trujillo, a fourth generation coffee producer from Santa Bárbara, Antioquia, Colombia. This unique coffee underwent a 400 hour fermentation and then was frozen for 3 days. After 3 days the cherries are spread onto sunbeds for up to 6 weeks until under 11% moisture. The result is a showcase of Dark Chocolate, Luxardo Cherry, and Raspberry Jam. With that being said, this beverage is extremely complex with a spectrum that will take you from a coffee shop surrounded by evergreens to a dessert bar on a tropical island.
