Kiesbye Naturbrauerei - Waldbier 2026 - Fichte & Moos

The 16th edition of the collaboration between the Austrian Federal Forests and master brewer Axel Kiesbye is dedicated to the theme of “Forest Symbiosis.” Brewed with spruce tips and haircap moss from the Salzburg region. Forest honey-colored reddish-brown. Smooth malt notes blend with the apple-like aromas of the Calypso hop variety. The slightly bitter notes of the haircap moss, combined with the resinous, nutty aromas of the spruce tips, come together to form a complex work of culinary art that will gradually evolve toward notes of dried fruit and cognac as it ages.
