Kykao - Brettanomyces Manumalus

Experience the complexity of a spontaneously fermented wild ale, cerated solely with native wild yeast and bacteria, and a rich brettanomyces presence. The beer underwent fermentation in a homemade coolship and was the aged on locally sourced apple skins. Pours yellow to golden, partially cloudy, aroma is funky and wild, brimming with ripe white fruit notes and a distinct brett character. On the palate, the beer presents a gente tartness, coupled with an alluring hint of sweetness from the apple and pear aroma, culminating in a satisfying medium tart aftertaste.
