Kykao - Reverse Engineered Rose

Going beyond Revers Engineering by adding Mavro Kalavritino grape skins provided by a famous organic winery, Tetramythos. Spontaneously fermented with the wild microorganisms existing on the skins, a beautiful pink hue with a musty aroma full of berries, carbonated lower than beer to almost resemble a still wine, aged on lees (batonnage) for a fuller body! Tilting the scale towards wine this time!
