Beer description
Brett de Chez Nous is a Saison-style amber beer with Brettanomyces (wild yeasts). In collaboration with Cégep de l'Abitibi-Témiscamingue and Labo Solutions Brassicoles (La Pocatière), 7 strains of Brettanomyces were isolated from Ékorce Kombucha (Val-d'Or). In addition to these Brett strains, Belgian and American Abbey yeasts were added to the brews during fermentation. The result is a wild beer with fruity, farmhouse aromas and a slightly acidic taste (SRM 7).
