Spontaneous, sour
Fermentation
Beer description
Brewed in collaboration with Le Griendel brewery, Lac-à-la-Brett is a sour beer refermented with Brettanomyces Lambicus yeast. This wheat beer stands out for its acidic taste, low bitterness and Brett aromas, reminiscent of the smell of leather. The beer's acidity comes from a 24-hour lactic fermentation of the sour wort. As well as having a very fruity nose, it has a wheaty flavour that makes it very refreshing (SRM 3).
