Sibeeria - Lager De Garde

French collaboration. Several months ago we visited our friends in Brasserie Au Baron on the French-Belgian border to brew a Czech-inspired saison. When they came to present it in Prague, we thought it might be fun to brew a Bière de Garde-inspired lager. A portion of wheat and French-grown Strisselspalt hops and a simple infusion mash schedule makes for a very different lager than we usually brew – nicely light, floral, and smooth with lower bitterness and a nice fluffy head. Side by side with the Saison Bohémienne we brewed together in France it nicely showcases what different approaches can be taken to marrying the two brewing worlds.
