Fermentation
Beer description
Inspired by his trip to Flanders, the Count skilfully combines malty, spicy flavours with a complex fruitiness. He visibly takes the strength of this beer in his stride.
The higher alcohol content of the Belgian-Style Strong Dark Ale is partly due to the addition of glucose and rock candy and is perceptible (and, depending on how much you consume, noticeable), but it remains in the background and is well absorbed by the malt flavour. Intense notes of biscuit, sultanas and dark caramel result from the addition of crumbly special brewing malt.
The fruitiness, which is largely the result of fermentation by the Abbaye yeast, harmonises with the spicy, floral aromas of the three different hops.
Hops
Pilgrim bitter hop, Tettnanger aromatic hop, Styrian Gold aromatic hop
