Beer description
In modern brewing, beer seasoning is the fruit prerogative of Belgian brewers in particular. In the Zenne river basin, beer was fermented by unique wild yeasts found naturally in the surrounding environment. However, the resulting beer had a very sour taste, so to soften it, it was fermented and flavored with various fruits.
However, the taste of real fruit is perfectly complemented with non-sour styles, such as Walloon Saison. A special type of yeast used creates the taste of ripe mallow in itself, but to evoke the autumn atmosphere, we have also added plums and junipers to the beer. During the fermentation of such wort, the same aromatic substances are formed in the fermentation tank as in the yeast used for the distillation of plum brandy. The result is therefore a fresh beer with a delicate, fruity aroma, with a taste reminiscent of traditional local Slivovice, with a dry, slightly hot finish and a hint of juniper.
