Beer description
The first of our new creations is “Dear Montana”, a traditional mead made with yellow sweet clover blossom honey and aged on medium toasted American oak. This is all ?? from the nose to the taste. Cinnamon, vanilla, coconut, apple, some fall spice, toffee, and white flowers. Powerfully wonderful aromatics from such a light honey (we think our unique process for traditionals has something to do with that as well) lead to a rich sweetness and a touch of oaky tannins in the finish.
This mead is the first in our new “Love Letters To The West” series, a very special lineup of meads featuring single varietal honeys that showcase the terroir of this beautiful land we call the American West. We spent A LOT of time searching for the right honey to kick off this series with. And one day Spencer Wingfield from Wingfield Honey Co stops in and gives us a sample of his clover honey from Treasure County, Montana... and Billy’s head nearly exploded. We’d had delicious clover honey before but nothing like this. It took a whole 3 minutes to decide this would be the first honey to launch our western terroir series with.
