Beer description
Madame Coucou is a sour fruit ale. This beer is first fermented with whey from La Sarre's Vache à Maillotte, giving it a nice acidity. It is then inoculated with Belgian Abbey yeast and Brettanomyces claussenii. During fermentation, blackcurrant and sea buckthorn from the La Hutte de Gallichan farm and Val-d'Or pear were added to the brew. In addition, the new Australian Eclipse hop was added cold. Like the fruit added, this hop is rich in fruity molecules called thiols. The result is a tangy, very fruity beer with a lovely pink colour. (SRM 3)
