Exclusive 100% Quebec yeast [harvested on oak wood by the Pit Caribou herbalist]
Beer refermented in the bottle to release and keep aromatic CO2 inside the bottle. During brewing, the wort was mashed lower (64) and fermented higher (25) than the previous version. The yeast thus released more phenols and it is drier in the mouth
