Time and barrels are those magical tools that help turn good into great. We made our very first mead from meadow honey, made it quite strong to make it more interesting, and sent it to rest into an oak apple brandy barrel. The wood and the minutes did their mysterious work, and we continued ours and added cherry and pomegranate juices to the aged mead. All this together created a strong warming drink of deep cherry color with bright aromas of soft propolis, cherry jam, meadow flowers, spring apple orchard, a little tannin from pomegranate juice and wood. When everything around is gray and uncomfortable, such small miracles help the best.
