Spontaneous, sour
Fermentation
Beer description
About a year or so ago, we bought 924 lbs of black raspberries directly from Decker Farms for a planned one-off kettle sour. Through a series of events, we decided to hold off on that brew and were suddenly left with a tremendous amount of amazing, super fresh berries. We decided to make rack off a little bit of funky, mixed culture saison from one of our foeders (large oak tanks) and make an insanely over-the-top funky berry creation. The result is a crimson red beer, pouring almost like a Lambrusco wine. The taste continues into wine territory, with ample tannins and lots of juicy Berry jammy notes. Sweet Berry wine, indeed.
