Spontaneous, sour
Fermentation
Beer description
Ever innovating, our brew-sorcerers are constantly coming up with brilliant ways to harness the tastiness of second-use fruit. They’ve been extremely successful thus far, especially in the case of this fantastically funky, foeder-aged grisette/witbier blend, both components of which were fermented with our house mixed cultures. Once the beer was perfectly balanced, we added the aforementioned fruits: pluots, apricots, and Bing cherries. The resulting beverage is JUICY, with a huge stone fruit presence whose tartness is juxtaposed wonderfully by the complexity supplied by the oak. It’s seriously good, and if you don’t know, now you know.
