Mont Sainte-Victoire: Spruced is our spruced-up spontaneous impression of the the monolith of saison. This first foray was brewed in the spring of 2019 with NJ wheat, buckwheat, and rye, and spontaneously open fermented on 2019 harvest local NJ spruce tips. After a year of aging in neutral oak, the beer was conditioned on freshly gleaned 2020 harvest spruce tips from some of the same trees.
