Beer description
Inspired by some of our beloved traditional Teutonic keller pils, it sees a generous addition of noble hops in the whirlpool but no dry hopping. The ‘crispness’, as they say, of the malt protagonist on the palate, another typical feature of this style, was emphasised and characterised with a subversive choice: the addition of a percentage of Maris otter in the grist: a typically English malt, responsible for the ‘bread crust’ characteristic of traditional bitters, which we tried to force into a part that does not belong to it, but which under the direction of the yeast used made an unusual but appropriate contribution.
