5th Anniversary Blend 50% S.S. Siscoe aged 4 months in tequila casks 25% O'Sullivan 2018 aged 1 year in Bourbon casks 25% O'Sullivan 2019 aged 1 month in Bourbon casks Noces de Bois is a blend created to celebrate our 5th anniversary (5 years of marriage = Noces de Bois). In honour of our forest (chaï) of oak casks, this year two beers have been united by the bonds of marriage. This beer is a blend of our S.S.Siscoe (Old English ale) matured in tequila barrels, our O'Sullivan (maple Scotch ale) matured in Bourbon barrels and its slightly younger version, which has also spent time in Bourbon. The roundness of these barrel-aged beers gives this nectar a woody, vanilla and rustic flavour. Thank you to our loyal customers, without whom the barrels would not be flowing (SRM 18).
