Spontaneous, sour
Fermentation
Beer description
They took their Strong Golden Wild Ale and dry hopped it on a mountain of whole leaf Mosaic, Azacca, and Citra. Exceptionally aromatic with tropical notes of mango, orange, pineapple, and lychee that lead to a funky finish with plenty of oak tannins and firm acidity. This beer is their version of a Double IPA; instead of making it bitter they used their house mixed culture to keep things sour, aged in barrels for nearly a year, and dry hopped with more than 4.5 pounds of hops per BBL.
Hops
Azacca - ADHA 483 aromatic / bitter hop, Citra - HBC 394 aromatic hop, Mosaic - HBC 369 aromatic hop
