Beer description
This version of our Scotch Ale is a blend of 50% O'Sullivan 2017 (aged 11 months in Bourbon casks) with 50% O'Sullivan 2018 (freshly brewed). This beer is brewed with Quebec maple syrup added to the wort and caramelised during boiling. The maturation in Bourbon barrels (Jack Daniel's) with Brettanomyces Lambicus brings a woody, vanilla and rustic side to this beer while the addition of a young Scotch Ale makes this beer slightly soft and round on the palate (SRM 25).
