Beer description
This version of our Scotch Ale is a blend of 25% O'Sullivan 2018 (aged 12 months in oak barrels) with 75% O'Sullivan 2019 (freshly brewed). This beer is brewed with maple syrup from Témiscamingue (Érablière Tem-Sucre) added to the wort and caramelised during the boiling process. Maturation in oak barrels with Brettanomyces Lambicus gives this beer a woody, vanilla and rustic flavour, while the addition of a young Scotch Ale makes this beer slightly smooth and round on the palate (SRM 25).
