Hops have changed the history of beer by replacing the traditional aromatic ingredients used since the times of the Sumerians, characterizing their taste irreversibly. The aromas deriving from the hopping range from citrus fruits to sweet fruit, from resin to spices, determine the degree of bitterness and are today relevant in the final result as those deriving from malt, which also continues to be the fundamental ingredient. Originally the PAHs had an important alcoholic degree and in them the malt was the main organoleptic component, then, with the "artisan revolution", the breweries gradually introduced hops with increasing aromatic intensity while lightening at the same time the malted base. Given that the alcohol content contributes decisively to the balance of the scents deriving from hopping, we asked ourselves if it was possible to capture all the potential of hops and obtain a pleasant bitterness while keeping the alcohol content low.
