This is my attempt to brew an IPA that is as authentic as possible, similar to how it may have been when the first IPAs were shipped to India by sea. My assumption is based on the fact that almost all beers were smoky back then, as in pre-industrial times, green malt could not be dried with solar power in our latitudes, but only with the smoke from a fire. According to my research, the Golding and Fuggles hop varieties are among the earliest hop varieties cultivated in Britain. So let's add them, preferably in large quantities and as cones. To ensure that the style is authentically reproduced, I would like to brew the wort in one of the neighboring communal breweries. Really nice with a wood-fired brewing kettle and the wort being transferred via a hop strainer to the cooling vessel, where it is then left to cool overnight. After draining the wort into the fermentation vat and adding the yeast, the young beer is then transported to my brewery, where it is left to ferment and mature.
