Beer description

Sour specialty beer with elderflower. Pax Sour Elderflower is a sour beer. For the base, we blend our Blanche, a Belgian wit made from raw wheat, orange peel, coriander, and Szechuan pepper, with our full-bodied beer. Thanks to Ulrike Genz (a.k.a. Schneeeule/Berlin), the sour is then fermented with a mixed culture of Brettanomyces yeasts and several different bacterial strains provided by her. Local elderflower is then added to the young beer to give it a typical Rhön flavor. Finally, this specialty beer is matured on oak chips to increase its complexity, enriching it with nuances of wood, vanilla, and leather. To top it all off, the sour beer undergoes original bottle fermentation in true style, allowing connoisseurs to enjoy the variety of flavors dancing on their tongues with a fine perlage.
