Another metamorphosis in our stable of beers with names that are too great to pass up.
Somewhere in 2016 we brewed a beer called Take It Easy, which was hopped with Citra. It was an American Blonde inspired by the Eureka beer from Tree House Brewing. We brewed several versions of this beer in Single Hop edition (Citra, Mosaic, Simcoe, Equinox, etc.) and they were mainly available in keg. Years later we decided to resuscitate the Take It Easy name, but it is no longer American Blonde but Session IPA....
So we present the brand new Take It Easy. As for the hopping, we used a combination of hops - Centennial, Ekuanot, Hallertau Blanc and Strata - for the hot and cold. It's fermented with an English yeast strain that balances perfectly on the dryness/ester edge. The beer even came out perfectly sessionable and insidiously drinkable. Just remember to drink it without nerves.... calmly.... slowly... Take it Easy!
