Dark Saison with Roasted Dandelion Root.
This saison was a collaboration with the entire brewing team, starting with an encounter with the choice ingredient at the local spice shop and we couldn’t stop thinking about it. The roasted dandelion root that we smelled had huge aromas of cocoa nibs and chicory root, with a subtle spice. We built a dark saison recipe that ended up perfectly complimenting its character and creating an incredibly complex and interesting beer that is full of body, spice, dark flavors and a whole lot of soul.
