Prizm Brewing - Austerity

Prizm - Austerity is a DDH NEIPA brewed in collaboration with White Labs using the WLP066 LONDON FOG yeast (6%). Once again, their laboratory has launched a rocket. The brewery has bottled two beers in collaboration with White Labs, their yeast supplier. Both in their WLP and the Phantasm Series, they have once again put the work of the yeast at the center of their research. SAME MALT, SAME HOP BASE, BUT TWO DIFFERENT YEASTS. This time it was the WLP066 LONDON FOG & WLP095 BURLINGTON yeasts from White Labs used in our brewing processes. The LONDON FOG yeast was already familiar to them, as we had used it during collaboration with their dear Swiss friends from Blackpig (Harmonic Generator, DDH DIPA). Austerity is a DDH NEIPA brewed with the WLP066 LONDON FOG yeast. Thanks to the yeast, known for not flocculating as much during fermentation, it is much hazier to the eye. In taste, it is fruitier and reminiscent of grapefruit.
