Prizm Brewing - Austerity

Prizm - Austerity is a DDH NEIPA brewed with WLP066 LONDON FOG yeast (6%) in collaboration with White Labs. Once again, our laboratory has hit the ground running. We packaged two beers in collaboration with White Labs, our yeast supplier. Whether for our WLP or Phantasm Series, we have once again put yeast at the heart of our research. SAME WORT, SAME MALT BASE, SAME HOP BASE, BUT 2 DIFFERENT YEASTS. This time it was White Labs' WLP066 LONDON FOG & WLP095 BURLINGTON yeasts that were used in our brews. We were already familiar with LONDON FOG, having used it in our collaboration with our dear Swiss friends at Blackpig (Harmonic Generator, DDH DIPA). Austerity is a DDH NEIPA brewed with WLP066 LONDON FOG yeast. It looks much hazier thanks to its yeast, which is reputed to flocculate less during fermentation. On the palate, it gives off much fruitier & grapefruit notes.
