Beer description
The beer has a dark, intense colour, with ruby and dark brown tones. The foam should be light beige in colour and consistent, with good formation and retention. The aroma should be dominated by Simcoe, Centennial and Cascade hops, with citrus, floral and resinous notes. There should also be a slight aroma of toasted malt and bitter chocolate. On the palate, the beer should have a high, assertive bitterness, with notes of grapefruit, orange and pine coming from the hops The roasted malt should contribute a slight coffee and bitter chocolate flavour, but without being too dominant.
