Beer description
Fermented on a half-ton of merlot grapes from Malivoire winery through a process called “Carbonic Maceration”, this wild ale was a new experience for Sawdust City. Using no brewers yeast or hops, we allowed the grape/wort blend to end ferment before we aged it 2 months in stainless. Then we blended it with some of our barrel fermented Berliner Weiss aged on locally foraged sumac. The end result is a vibrant red ale, that pours with a perfect pink pillow on top. Aromas of grape, raspberry and earthy funk are present as it drinks with a light effervescent body and a sharp acidic finish.
