Beer description

This was a collaboration that emerged from the shared intrigue of decoction mashes between Is/Was Brewing , purveyors of some of the finest saisons, and us. Saisons and lagers are fundamentally different: saisons relying heavily on the complex esters and phenols produced by the yeast during fermentation, and lagers favoring neutral and “clean” fermentation character. In spite of their differences, they are similar in their traditional European roots and their tendency toward dryness. So, Mike of Is/Was and Tom combined their curiosities into a unique brewing experiment. They wondered how a double decoction mash would translate in a saison, and set out to create an opportunity to present two different beers using the same wort, whose only difference was the yeast and fermentation temperatures.
